Marinated sardines - Mαριναρισμένες σαρδέλες

This week for the Cuisine and greek specialities I present marinated sardines, I will tell you a traditional way to marinate sardines, the small and popular fish that normally is fried in most of the restaurants.


Preparation:
Buy fresh sardines and clean them well removing the head with a knife, Without piercing the fish all the way through, use the tip of the knife to loosen the spine and remove the bones from the flesh.
Then wash the fish under running water.

Ingredients:
15 sardines,
vinegar : 1 tablespoon each sardine,
some kosher salt,
3/4 cup e.v.o. oil
1/3 cup of lemon juice
chopped parsley
2 cloves garlic, minced

Instructions:
1_Take a sardine and pour a tbsp of vinegar and a pinch of salt inside.
2_In a baking dish lay the sardines.
3_In a bowl put and whisk the oil, the lemon and the garlic.
4_Pour the mixture over the sardines and sprinkle with parsley,
    put it covered with plastic wrap in the fridge for some hours in order to
    acquire all the flavors and the lemon to cook the flesh.

Take it out at least one hour before to eat and accompany with bread and a glass of white wine.

*For people who like strong spice you can add a piece of chilli in the marinade.
