Kourkoubinia

Today,I will present you, a sweet made in Greece!
The Kurkubinia! This sweet is easy to prepare and fit to every occasion.

Ingredients.

For phyllo bites:
1 package phyllo dough
oil, for frying

For syrup:
2 cups sugar
2 cups water
1 cup glucose syrup
rind from 1 lemon
1 cinnamon stick

Preparation

Place all the ingredients for the syrup in a pot, and bring them to boil.
As soon as the mixture starts boiling, allow to boil for 1 minute and set aside to cool.
Brush a sheet of phyllo dough with some oil. Brush the edge, a 5cm border, with some water and dust with some flour. This will help the borders to stick together, and prevents the remaining part of the sheets of phyllo from sticking together.
Place another sheet of phyllo over it and repeat the same process. Brushing with oil and then brushing the border with water and dusting with flour.
Roll into a cylinder, being careful to align the edges so that the border brushed with water and flour can stick together securely.
Repeat the same process with the remaining sheets of phyllo.
You should have a total of 6 cylinders.
Let them rest for 20 minutes, to allow the phyllo to “set” and stick together.
Cut cylinders into 1 and a half cm pieces.
Fry in batches over medium heat, until golden.
When ready, transfer to a plate lined with paper towels, and immediately add to pot with cold syrup.
Let them soak for 1 minute and remove with a spoon...
