Watermelon soup

Are you yearning for summer? It is easy to yearn for warm days now, when the weather is still chilly. But in summer, you will yearn for a chilly breeze, I will give you the recipe for that chilly breeze that you will be drooling over in summer. It is called Karpouzosoupa, chilled watermelon soup.

 

 

 

You need:

  • 8-10 cups of seeded watermelon chunks
  • 900 grams of fresh fruit of your choosing
  • 1 handful of golden raisins
  • 1,2 dl of sweet wine
  • 3 tablespoons of greek thyme honey
  • 3-4 leaves of fresh mint

 

Remove seeds from the melon and cut into chunks. Use a food processor or a blender to make a puree of the watermelon, process with wine and honey till its completely liquefied.

transfer to a large serving bowl and stir in fruits and mints, cover and refrigerate for at least 4 hours before serving.

 

this dish can be served as a fruit salad, but also as a drink.
