Gyro burger

You want something to impress your friends with at for example a barbecue then mini gyro burgers is perfect for just that. Its really easy to make and really good .

 




First you need to make the buns for the burgers, for that you need:

2 tsp active yeast

3 cups all-purpose flour

1 cup warm water about 41° C

1 egg

3 Tbsp butter, melted

2 Tbsp white sugar

1 tsp salt

Vegetable oil, for brushing bowl and dough

1 egg

1 Tbsp milk


Stir together yeast, ½ cup flour and water in the bowl. Let sit until mixture becomes foamy, 10-15 minutes.

Stir the melted butter, egg, sugar and salt into the yeast mixture. Add the remaining flour and knead with a dough hook, or by hand until smooth and elastic.

Form dough into a ball and brush lightly with oil. Place in a lightly oiled bowl and let rise for about 2 hours.

Form dough into a thick rope and cut into 10 pieces. Work with 1 piece of dough at a time, and keep the remainder covered. Form each piece into a ball, tucking the ends underneath. Slightly flatten the ball with the palm of your hand.

Place dough patties on a baking sheet .Allow to rise about 1 hour, until doubled.

Heat oven to 225. When buns have risen, whisk together egg and milk. Lightly brush the egg mixture on top of each bun, being careful not to collapse the dough.



Now for the burgers you need:

250g freshly ground lamb, well chilled

250g freshly ground beef chuck, well chilled

85g pork fatback or bacon, diced and well chilled

1 teaspoon minced garlic

2 teaspoons kosher salt

1/3 cup finely minced red onion

Half teaspoon dried oregano, preferably Greek

Half teaspoon freshly ground black pepper


First mix the lamb, beef, bacon, garlic, salt, onion, oregano, and black pepper with your hands or a machine till the meat is soft and you can easily make it into a ball. Now make around 10 small burgers with your hands its best to cook them on a grill but if you don’t have it a pan is ok to. Cook about 2 minutes on each side when its finished but it inside the bun and I would recommend putting some tzatziki on top.
