Vasilopita (Greek New Year's cake)

Vasilopita is a traditional Greek cake that is served on New Year's Eve usually around midnight.
Greek families make the cake to celebrate the life of Saint Basil and to bless the house for the new year.


A coin is placed somewhere in the middle of the cake.  
Each family member gets a slice of cake by order of age. The eldest gets its piece first. Everyone is desperately hoping that they are the lucky one who got the piece of cake with the coin in it. That Person gets rewarded with good luck for the entire next year.
Even if you don't get the piece with the coin in it, you still get to enjoy the taste of sweetness and orange from the cake!
Depending on the region there are slight differences in how to bake the cake. Often falmilies have their own  Vasilopita recipe which they pass on from generation to generation.

Here are all the ingredients you need:
-375g butter
-3cups of sugar
-6 eggs
-750g sifted flour
-a pinch of salt
-zest of 2 oranges
-1/2 of orange juice
-1 tbs vanilla extract
(If you like your cake to be more moist add 200g of yoghurt)

If you want your cake to be even sweeter, add this delicious glaze made out of:
-3 cups icing sugar
-3tbs hot water
-1tbs vanilla extract

Before starting, you should make sure that your butter is kept at room temperature.
The first step is to mix the butter and sugar until the sugar has dissolved and the mixture is really creamy.
Add the eggs and whisk thoroughly. Then add the orange juice, the vanilla extract, salt as well as the orange zest. Mix these ingredients until they are combined. If you like you can add some yoghurt to make the cake taste more moist when finished.
Slowly start adding the flour and blend with light circular movements from the bottom up.
After mixing it all together hide the coin in the base of the cake dough so that is not visible.
Preheat the oven to 175C and bake the cake for around 1 hour. Make sure to butter the cake tin before pouring in the mixture so that the cake doesn't stick.
When the Vasilopita is finished, let it cool down. In the meantime you can prepare the glaze by simply combing all the necessary ingredients until you have a smooth thin cream.
