If you happen to be in Greece you will notice that many Greek food specialities are made with filo pastry. One delicious Greek dish made out of filo pastry is called Tsouknidopita.

 

It is a Greek pie filled with nettles and feta cheese. The pie is a perfect meal to share with friends and family.
Once you know the recipe for the dough you can go and bake many pies with different fillings.
For the dough you mix:
.500g of flour
.100ml olive oil
.10g of sugar for some sweetness
.1 1/2 teaspoons salt
.210ml water
.200ml olive oil for brushing over the pastry

For the vegetarian filling:
.3tbsp olive oil
.4 chopped spring onions
.1kg nettles
.1/2 chopped bunch of mint
.1/3 bunch of dill or a other herb
.500g Greek feta cheese, crumbled in pieces
. a generous amount of freshly ground pepper and salt
