Baked eggplant with Feta Cheese

Baked eggplant, tomatoes, herbs and feta cheese; if you are looking for a delicious appetizer, side or even vegetarian main dish, you should definitely give this classic combination a try.

 

 

 Ingredients:

  • 91 decagram eggplants (longs slender type)
  • 45 decagram ripe tomatoes (diced)
  • 5 tablespoons fresh basil (chopped)
  • 5 gloves garlic (minced)
  • 23 decagram feta cheese (crumbled)
  • Sea salt
  • Freshly ground black pepper
  • Olive oil for frying

 

Start by preheating the oven to 176 C.

Proceed by washing the eggplants and removing the stems, before cutting them into 1 cm thick slices. Fry them over medium heat until they are soft and slightly brown.

The next step is to layer the eggplants in a baking dish. Mix the tomatoes, basil, garlic, salt and pepper and pour the mixture over the eggplants. Put the feta cheese on top and bake for 45 minutes.

Once they are done you can either enjoy your Μελιτζάνες με φέτα hot, warm or at room temperature.
