White Bean Puree

Today in the chiosradio kitchen: an extremely simple, but unbelievably tasty 'dish', if you want to call it that. It is more of a side or a dip, but believe me when I say paired with some fresh pita bread this can easily make for a full meal. I am talking about white bean puree. Sounds simple, and it is. But let's stop the talking and jump straight in.

 

We will need:

- unsalted butter

- one small onion

- one garlic clove

- thyme

- one cup of dried white beans

- salt and pepper

- other spices, depending on taste

We start this recipe off by soaking the beans in water for at least 8 hours (best over night).

When the beans are ready put them in a pot, cover them with water and simmer until they are soft (usually 30-40 min).When the beans are done chop the onion and the garlic into small pieces. Melt the butter in a frying pan and fry the onion and garlic until softened and translucent. Then add the beans and fry for a little longer, but only a few minutes. Then put everything from the pan into a bowl and puree. Add the salt, the pepper and some thyme, and other spices depending on what you like, for example paprika, until it tastes right to you!

Enjoy warm or cold with some fresh (pita-)bread.
