Mushrooms with Garlic

Today we will have one, maybe not so famous Greek dish. Maybe because it is more or less a kind of a side dish. It will be not very difficult to make, so let’s start with the cooking of the mushrooms with garlic and lemon. Usually you eat the mushrooms cold as a side dish, or salad. What I also can recommend you is to take them into a salad with mainly lettuce.

Also then you don’t need any kind of dressing, maybe a bit of balsamic cream on the top, but you will see the mushrooms loose some water and also the oil with garlic harmonizes perfectly with the lettuce. Okay, enough with the talking, let’s really start the cooking!

You need for the garlic sautéed Mushrooms:

  • Around 300 gram crimini mushrooms (the brown mushrooms)
  • ½ lemon
  • 1 tablespoon of olive oil
  • 1 garlic clove
  • Some pepper
  • 1 bay leaf for the taste
  • Some lemon juice (you can use the other half)
  • A bit of water
  • Some parsley

Okay, now let’s start preparing! First, take the half of lemon and rub the top of each mushroom. Put in one pan the olive oil, the mushrooms, the garlic thin sliced, and the bay leave. For the taste you can also season with some peppercorns and thyme. Now, sauté on medium heat for about 4-5 minutes, until the mushrooms loose a bit of their juice. After that, add the lemon juice and around 2 tablespoons of water. You can also use a bit of wine instead of the water. You will like the taste, because it harmonizes very well with the mushrooms. In this case you should be aware that white wines with a lot of acid or very dark red wines can provoke a metallic taste. I can suggest you a Chardonnay for example. Okay, enough about the wine, let’s continue cooking. Keep sautéing the mushrooms until they get soft, but not mushy. Perfect, now we are ready. You can either serve it as a medium-warm side-dish or you can cool it down and put them over your salad. For the last I can recommend you to use water instead of wine because it doesn’t fit so well to the salad. Also the rest of the oil and the water has a very unique taste which you can put over your salad. Enjoy your meal!
