Greek Coffee

Today we want to have a closer look on the greeks favourite coffee called ellinikos.


For making it you first need a briki. This is usually a pot made out of steel which you need to prepare the coffee. It is needed to create the typical foam of the coffee so that you can recognize it as original ellinikos. In general you receive two portions out of one briki. The ellinikos is usually served in a demitasse cup, "the flitzani" which can contain only half of the volume of a regular cup.

So just put water and one heaping spoon of coffee in the briki. Now turn the heat over medium and stir until the coffee is dissolving. The foam should now be rising to the top of the briki, which is traditionally called "kaimaki". Depending on how sweet and strong you want your ellinikos, you simply vary the amount of sugar and coffee putting in. Basically there are three different taste directions. First is Varis Glykos, which is characterized as pretty sweet and strong. Then there is Metrios tasting medium sweet and last Sketos which is leaving the sugar completely out. After the kaimaki reaches the top of the briki you should turn off the heat and wait about one minute before you serve it. The ground can settle down during this period of time. Finally you can serve it and enjoy the in my opinion unique taste. Ellinikos cafes are easily to find whether you are in the capital Athens or in a more rural area for example on an island.
