Kokoretsi - Κοκορέτσι

In Greece the most known meat is the lamb. Do you know a tasty Greek dish which you can make with lamb and many others kind of meats? Do you like to eat meat, but you haven’t got any idea how to prepare it?  If you want to improve

your skills in cooking you should read and try to make the Kokoretsi.
Kokoretsi is the most known dish of the Balkans, Greece, Azerbaijan,  and Turkey. It is a traditional Easter dish, but we can also try it in Greek restaurants all around the year. The Kokoretsi could be served as a starter or as a main dish. This course is consisting of lamb or goat intestines wrapped around seasoned offal, including sweetbreads, hearts, lungs or kidneys and typically grilled.
. INGREDIENTS
•    4 kilos of lamb internal organs, including liver, heart, lungs and kidneys
•    5 kilos of offals to wrap
•    spices as such  lemon juice , olive oil, oregano, salt, pepper and garlic

PREPARATION
The offal, along with some fat have to be  washed and cut into thick pieces and slightly seasoned with lemon, olive oil, oregano, salt, pepper and garlic. The intestines are turned inside out and carefully washed, then sprinkle with salt and often soaked in vinegar or lemon juice and water. The filled meats are threaded onto a long skewer (is a thin metal or wood stick used to hold pieces of food together  used while grilling or roasting meats) and wrapped with the intestine to hold them together, forming a compact roll. Then we have to take our roll and put it on the skewer and grill it until the moment the meat won’t be raw anymore.  
SERVING
The cooked Kokoretsi is chopped or sliced and then sprinkled with oregano and served on a plate. Sometimes it is served on a piece of flatbread (it is a kind of bread). Some add tomatoes or spices in it.
