Feta Croissants

It is time for cooking, my dear friends. If you aren’t hungry yet you will be after reading this recipe for feta croissants – and I really promise :)

But before you can start to eat, you know – preparing and cooking time. So take on your nicest cooking dress and let’s start.

What do you need?

The croissant:
2/3 teaspoon baker's yeast
2/3 cup canned evaporated milk
2/3 cups water
1 1/2 tablespoons sugar
2 tablespoons olive oil
1/2 teaspoon salt
1 egg that is beaten
4 cups of bread flour
!!! If you don’t have so much time you can buy the baked croissants from the supermarket or bakery. Just try.

The filling:
2/3 pound of feta cheese

The glaze:
1 egg that is beaten

After organizing all the ingredients you can start with a lot of motivation and growing appetite during the preparation.
Put the milk and water in a bowl and add sugar, salt, yeast, stir and oil with spoon until the yeast disappears. Afterwards you have to add the beaten egg and 4 cups of flour. Just knead in the bowl with your hands until it does not stick to your hand. Maybe you must add flour. Afterwards the dough will start to rise.
Now the dough is grown and you must form your croissants on a floured table because the eyes eat, too. Just knead the dough into long pieces,  cut the pieces into 5 equal parts, roll each piece of dough into a circle, for mathematics a 13inch circle. Now just cut the circles in quarters and then in halfs to make some triangles. When you have finished you have to preheat the oven to 350°F (180°C).

The delicious part comes now, because you prepare the filling. Fill each croissant with the best feta you can find. Roll the croissants to the end and close it at the end carefully. Now you can brush the tops of the croissants with beaten egg and bake them at 350°F (180°C) for 15-20 minutes. You can decide whether you want it light or gold-brown or different.

If you want you can vary the filling with typical Greece ingredients. Maybe olive, or everything you can find in the kitchen and garden – just try.

My dear cooking kings and queens, I hope that everyone of you likes this recipe and feels the taste of Greece.
