Bucatini all' amatriciana

Welcome back to chiosRadio kitchen where today we will teach you the most famous recipe not only in Italy but worldwide and here in Greece :  Bucatini all’ Amatriciana.
It took its name from the town of Amatrice and also

is recognized as the recipe of "5 P" : Pasta, Pancetta, Pomodoro, Peperoncino, Pecorino (= pasta, pancetta, Tomato, Chilli pepper, Pecorino).
It’s very delicious and really easy for the lovers of the kitchen
Let’s go see what we need:
Ingredients for 4 people:

    360gr bucatini
    120gr pancetta into small cubes or thin slices
    250gr ripe fresh tomatoes
     Half red hot pepper
    1-2 cloves garlic
    1 big onion
    5 basil leaves (optional)
    Olive oil
    Salt

How do we do it:

Wash the tomatoes and cut them into small pieces.
Place in a saucepan the olive oil and sauté over medium heat the onion and after couple minutes the garlic. Then we add the tomatoes bringing to boil for about 10 minutes till you see the water evaporating.
Add the basil and leave for another 5 minutes to fire. At the end remove the garlic and basil.
In another pan put the pancetta and chili pepper and sauté just the time to melt all the fat.
Then, join all the ingredients and season with salt.
At the same time boil water for pasta, properly salted! Boil "al dente".
Once you have drained the pasta, put it in the pan with the sauce and mix well. Let it
"rest" for 1-2 minutes before serving.
Serve with pecorino.

A few more secrets
You can put the pasta of your choice. However with bucatini is raw success!
Also instead of pecorino you can also try Parmigiano .
With regard to the water for the pasta, use the coarse salt. Attention to the amount! I reckon with the handful (about 2).
