Greek hummus
For starters, hummus is so awesome, you can spell it in a variety of ways. It works so well as a spread, a dip, an ingredient, or even just a meal all by itself. Hummus is an inexpensive, high-fiber and protein-packed food. This quick and easy hummus is a great base recipe, and you probably already have all the ingredients in your kitchen.
Ingredients:
400g tinned chick peas rinsed and drained/ (or 500g of cooked chickpeas)
2 lemons
1 sprig fresh oregano, leaves chopped
1 clove garlic, finely chopped
Salt
2 table spoons tahini paste
A handful fresh flat-leaf parsley
40g kalamata olives, well drained and chopped
1 pack pita chips
1/2 seedless cucumber, cut into sticks for dipping
A medium red pepper, seeded and cut into strips for dipping
Method
1) Mix chick peas, juice of 1 lemon and oregano. Mash garlic into paste with some salt pressing under the flat part of your knife then add garlic to your mixture with tahini paste and parsley.
2) Combine your hummus in food processor or use the blender until smooth (add a splash of water if too thick) then transfer to a bowl and stir in olives, reserving a few for garnish.
3) Serve dip with pita crisps and vegetable sticks.
