Kolokythokeftedes
The greek speciality of today is Kolokythokeftedes – greek zucchini and feta fritters. This dish is very popular in Greece especially during the summertime as an appetizer. But you can also have them as a main dish served together with tzatziki and salad.
The meaning of the word is zucchini balls but they are mostly not formed as balls but as patties. As the recipe is simple you can easily make them by yourself.
You only need
- 1kg zucchini (4-5 medium sized)
- 2 eggs, lightly beaten
- 250g feta (if you want more cheesy patties, you can add more feta)
- 15g mint, finely chopped
- 15g parsley, finely chopped
- 15g dill, finely chopped
- 100g all purpose flour
- salt, pepper
- for frying 250ml olive oil
Grate the zucchini and squeeze it in your hands to remove as much water as you can and put them into a bowl. Add the eggs, the parsley, the dill, the mint, the flour and the pepper and mix it. Then add the feta and form the mixture to patties. Put the olive oil into a pan. If it`s hot, fry the patties in the pan until they are golden brown.
