The island of Chios is known for many local foods, which, as it is commonly known, are partially adopted from both the Greek and the Middle East cuisines, as for hundreds of years those two regions were one country sharing the same culture.
But what else Chios has are well known dishes prepared in a special, regional way. And so, pasta, a staple Italian food, is made by Chians in a very distinct manner (or at least it is believed so).

In summer it’s oft too hot, to eat much or even to be able to cook something. I have now the perfect meal for these occasions: Briam. This typical Greek dish has neighbours in France and Turkey and is very tasty, easy and quick to cook. Greek people also call it “Tourlou” what means “various things” or “all sorts of”. It contains mainly vegetables and much olive oil and is very healthy. has his origins in Crete and his name comes from Turkish. So let’s start cooking!

Today I would like to show you how to prepare one of my favourite greek veggie starter. Traditional Greek Kolokithokeftedes are the fried zucchini balls and it is a dish which comes from Crete Island but you can find them in the most greek taverns and restaurants.
