Souvlaki

Today on Specialties from Greek, I can proudly present you one of the most traditional and common Greek dishes: The Souvlaki. Although the Souvlaki has been invented many years ago, it is still very popular and many people consume it in traditional festivals like Panigiri, or in a Pita filled with tomatoes, Souvlaki and Tsatsiki. Aristophranes and Homer mentioned this tasty meal in their labors, so you see it has a long history.

Traditionally, the pork (sometimes also lam or chicken) is made on a charcoal grill and served with lemon juice or Tsatsiki, but today I want to explain how you can make it easily at home.
For 4 Portions of Souvlaki you need:
•    1 kg Pork steak
•    1 Spoon of Oregano
•    125 ml lemon juice
•    2 cloves of garlic
•    1 Spoon of black pepper
•    1 spoon of lemon juice
•    1 spoon of Olive oil
•    ½ Spoon of salt
•    12 wooden skewer (15 cm long)
What you have to do:
Before you start cooking, I can recommend you to put the skewers for minimum one hour into water, in order that they will not burn during cooking. While waiting you can cut the meat into cubes of 2x2 centimeters. Cut the garlic in very small pieces and put the Oregano, the 125 ml lemon juice and the half of the pepper in one bowl and mix it well. Also put the meat inside and leave it in a cold place for one hour. Preheat the oven at the highest level and then grill the Souvlakia for 8-10 minutes. Don’t forget to turn them. While waiting, prepare the olive oil, the lemon juice, salt and pepper in one small glass. After the Souvlakia are finished, add the mixture and serve your dish with a piece of bread and Tsatsiki.
My recommendation: You can also use a bit more olive oil and leave the meat longer in the bowl in order to get a better taste. Laughing
