Today I dedicate my article for all the people with sweet tooth!  I would like to show you a delicious and simple Greek cake. It is not one of the most popular cakes, but it should be, because the the taste is amazing. The basis of the cake are oranges ( like in many other Greek cakes and desserts). Recipe is very easy, and everyone can make this cake in a very short time.

 

 

Kéik portokáli 

 

Batter ingredients :

3 cups flour

2 cups sugar

1 cup olives oil

2 cups orange juice (freshly squeezed)

a little brandy, rum or other alcohol 

lemon peel (one lemon)

orange peel (two oranges)

2 teaspoons baking powder

big pinch of cinnamon and ground clove

 

Syrup:   

200 ml water

170g sugar

1 tablespoon honey

lemon peel (½ of lemon) 

juice of  ¼ lemon (one orange)

one cinnamon stick

 

 

Directions

1. Beat the olive oil with sugar and add all the other ingredients. At the end add slowly flour and blend it until the batter will be dense .

2. Smooth the baking pan with a butter, and pour the batter into prepared pan. Bake in 180 degrees for 1 hour. The best baking pan would be more oblong (then cake will be not too high).

3. Add water, sugar, lemon and orange peel and cinnamon stick into a small pot.

4. Bring it to boil and then boil  for 5 minutes (until the sugar is melted).

5. Take it off the heat and add honey. And after mixing, soak the cool cake with hot syrup. The best is to leave the cake for night, then the cake will soak more syrup.
